Easy Baked Veggies

Easy Baked VeggiesThis is definitely my go to recipe if I want to bake a lot of veggies at once in a short amount of time. It’s really simple and allows you to get very creative. In this recipe I added bacon to get a little more protein and fat into my meal but you can easily omit it.


All you need…

Your favorite veggies (I used brussel sprouts, zucchini squash and broccoli)- amount depends on how full you want your pan to be

Extra Virgin Olive oil

1 package of bacon (optional)

A 13X9-baking pan



  1. Preheat your oven to 400 degrees
  2. While oven is heating chop veggies to desired size and place in pan. Once veggies are in pan, top with a generous amount of extra virgin olive oil (enough to coat all the veggies when you mix them) and then add seasoning (again, add your desired amount).
  3. Mix veggies, seasoning and olive oil (either with your hands or a spatula) until seasoning is evenly spread throughout the veggies.
  4. Cover with foil and place in preheated oven for 20-30 minutes or until desired veggie “consistency” is achieved.


Optional- when I add the bacon I cook the bacon first until it’s just about done, then I add the bacon to the veggies before I add the seasoning and olive oil. You may not need as much seasoning when you add bacon. Too much seasoning and bacon will make it salty.
